"At first I was reluctant to buy this sharpener, for 2 reasons: fear of ruining my now dull knives and the price. I bought this sharpening station based on everyone's glowing reviews. I thought if this many folks can be happy and satisfied, then I had to give it a try. My expensive knives were so dull and such a chore to use. I had no place to take them to get them resharpened other than sending them to the manufacturer, which was not an option for me. Let me tell you, I don't regret buying this sharpener. It is a pleasure to use my knives now. Money well spent. The only thing I regret is that I didn't buy it sooner!"

Everybody Needs One

"There's no tool in the kitchen more important than a sharp knife. For years I tried sharpening my kitchen knives with those round "steels" and never really got a good edge. I tried other gadgets as well but all fell short of expectations. I finally took a leap and purchased a Chef's Choice sharpener. Wow !!! What difference!! That was ten years ago. This is my second Chef's Choice unit. I replaced a model 110 that was at least ten years old, so, I can truly say, these things pay for themselves. It seems a little pricey but when you consider the years of service, the excellent quality results and the convenience of always having sharp knices,"right now", it's well worth the investment. When I received my new unit last week, I sharpened all the knives in my kitchen and the results are stunning. I immediately took my sharpener to my Mom's house and sharpened her ancient, dull knives and every time I talk to her she mentions how beautifully they turned out. I have started the process of buying one as a gift for each of the cooks in my family. I never took my knives to be sharpened. It's not a cost thing, it's just a hassle carting them somewhere and going back to pick them up. Now I can sharpen / re-sharpen any time I want and it literally takes a minute per knife. I also carry a pocket knife and man oh man, I've got an edge on that thing, better than new. This is one sure way to fix those dull blades, very nice."

A Bargain at any Price

"After struggling for years with stone and steel and then manual sharpener and steel with not so great results, I finally bought the Chef's Choice Pro Sharpening Station 130. What a great product! In about 15 minutes, I had my entire set of Trident Wustoff's & miscellaneous cook's knives sharpened. Now I have to be very careful because the edge of each of the knives is so sharp, I have to learn to use less pressure. I'm constantly surprised at the quickness of the cut. Well worth the money."

"The past few years I have become a bit of a kitchen knife geek. I have developed a real appreciation for good knives and the difference they can make in food prep tasks. Before this discovery, I was always a bit afraid of cutlery, worried that I was going to cut off one necessary appendage or another. But, I have come to learn that you are far more likely to cut yourself with a dull knife than a sharp one. I have watched enough cooking shows to learn to keep the fingers curled under and most importantly, the thumb tucked in. Once I had those skills mastered, I learned to use my knives without fear or hesitation. But then came the dreaded day when I realized that my knives were not as sharp as they once were and it was taking me longer to accomplish my food preparation tasks. For a while I tried a sharpening steel, but that process in itself is a little scary, and I was uncertain that I was putting the proper edge on my cherished knives. So, I deciede rather than take a chance of damaging the blades, I went on a hunt for a sharpener, I reviewed many before selecting the Chef'sChoice Pro Sharpening Station 130. This became my final choice for a few very good reasons. First, it sharpens straight, serrated and asian style knives. Second, it is designed to automatically hold the knife blade at the proper angle to achieve the perfect edge. Third, it accomplished the job very quickly and the cutting edges that it creates are wonderful! And last, it's compact and doesn't take a lot of storage space. After receiving mine, and sharpening all of my knives, I told my sister about it (another knife geek), and she has ordered one as well. And as always, the Chef's Catalog had the guaranteed lowest price. It has been a win win situation all the way around. So if you're looking for something to sharpen ALL of your household knives, give this one a try...you won't regret it!"

Knives are as good as new!

"I have very high quality knives, but most of them are at least 30 years old and extremely well used. For many years, hand sharpening with a ceramic "steel" kept a nice edge on them but, in the last few years, nothing seemed to be very effective. They have never been professionally sharpened. After reading the reviews of the Chef's Choice Pro Sharpening Station, I asked Santa to put one in my stocking for Christmas. He did and it exceeded my expectations! First I read the complete directions, then proceeded to sharpen my treasured, old knives. I couldn't believe how quickly an absolutely perfect edge was achieved. As old as they are, it took only three or four passes on each side of stage one and about the same on stage three, which took less than a minute per knife. Super fast! My best "sharpness tests" are slicing a tomato without smashing and slitting the top of a loaf of french bread after the last rising, before baking without causing it to fall, both fairly delicate operations. My newly sharpened knives passed both tests with flying colors. I highly recommend the Chef's Choice Pro Sharpening Station to anyone who enjoys spending a lot of time in the kitchen. It's a pure pleasure."

"I hate to admit this, but i had invested in a few very expensive knives but had never had them sharpened. after reading alot of reviews on this product, i purchased it. It has changed my preparation experience completely. My once dull knives are now just as good as new and, with just minimal practice, i am able to maintain a nice sharp edge. i had to sharpen them quite a bit at first, relying on step one quite a bit, but now, before i use them, it's just a few swipes of step 3 and my blades are kept sharp and in amazing shape. it's a great sharpener and much safer than walking around the city, taking them somewhere to be professionally done...why bother when you can use this? it's GREAT!"

"I was very hesitant about purchasing a knife sharpener, not wanting anything to harm my expensive knives. But I was tired of sending my knives out every few months, so I decided to give it a try. TOTALLY WORTH IT! This product does a great job. If you cook alot, then you know how important it is to have a good, sharp blade. This will not disappoint. Be patient and follow the directions carefully and you will be very happy with the results. Word of caution: be careful... the blade will be very sharp!"

"I got this to sharpen my knives, but did not realize how easy and efficient this is. The price was was we were looking for the the ease and easy use is what really sold me. The directions were easy to follow. and the knives were as sharp as when I first bought them. I highly recommend this product. "Really is fool proof, but, patience is required. It will put an incredible edge on your knives. If you have an older/just throw into the drawer knife (yikes!!) - practice with that one first prior to using this on your pride and joys. Be consistent on follow through using the same stroke and pressure on each side and you will be sold on this unit. The only way to step up to the next grade sharpener is to send your knives back to the factory. Chef's 130 is a permanent fixture in our kitchen now."

"This is a great knife sharpener. Having worked as a food professional for years, I value my tools and try to keep my knives as sharp as possible. This sharpener gives me nice edges, even on my expensive steel blades. Now instead of having them professonally sharpened every 3 months or so, we only have to have them ground about once a year. Even though it's a bit pricey, if you use your knives the way we do, you'll be glad you made the investment."

A Sharpener that really works

"I purchased this sharpener after seeing a review by America's Test Kitchen. I have been pleasantly surprised with the quality and function of this appliance. I found that the edge contour of most of my knives required the use of the 1st stage at least once. But then all that was required after that was stage 2 & 3. It is very easy to use and does put a shaving edge on most knives. Some of the cheaper knives won't hold the edge as long but that is to be expected. If you leave the sharpener plugged in near where you do most of your cutting, you will find yourself only using a quick stage 3 and your knives will always be razor sharp."

"My husband and I received the Chef’s Choice knife sharpener for Christmas. We love it. Before my husband would never let me sharpen our knives because he was afraid I would ruin the edge. Not an experienced knife sharpener, I can use the Chef’s Choice without concern. It guides the knife for you through the magnetic sharpening stones at the perfect angle. There are three sharpening stones or steps. The first takes off chips or is more like a rough sharpen for those really bad knives. Then the second, adds that wonderfully sharp edge while the third step is a finish to the edge. My husband doesn't have any more concerns now. It is as easy as 1, 2, 3!"

"A dull knife is a dangerous knife. As an avid home cook I take my knives seriously. My problem was always finding someone to sharpen them because I was concerned that I would damage my expensive knives by trying to sharpen them myself. Most sharpening gadgets seem to only hone the blade, and this tool has that capability but much more. It brought some of my mother's hopelessly dull knives back from the dead. I use this so often it sits on my counter right next to my knives so it's handy anytime my knives need honing. Having my knives this sharp cuts my prep time down and makes it safer to slice things such as onions where it's easy for a dull blade to slip and cut you."

"I can't stand a dull knife. My husband is an abuser of knives, but can't stand a dull knife when it comes to carving the meat for a company meal. I have never been able to sharpen a knife properly, and to get my husband in the kitchen to do it for me is like pulling teeth. Then I received Chef's catalog and saw this knife sharpener. I purchased it and hoped it was as good as advertised. It was the smartest thing I have ever done. My knives are sharp and stay that way for a long period of time. "Having been brought up in a home with a family in the meat business I learned to sharpen and hone a knife via the old methods of using a whet stone or an oil stone.
This Sharpening Station is very simple to learn to use and to obtain EXCELLENT results. The edges are clean and exact in their sharpness. The amount of wear on the knife edge is less than stropping a knife on a stone. Overall I would say that the knife will last longer even if you sharpent it more often only because the edge is immediately finite in its cutting ability."

"Spending six years selling cookware and cutlery taught me that good things aren't cheap and cheap things are seldom very good. This is true with knife sharpeners and this one is a keeper! Having used my personal set of cutlery (Royal Prestige) for fifteen years had dulled the blades to the point of needing to be sharpened. Sending them in to be done was out of the question as there are over a dozen knives in this one set, and I have pocket knives and other knives in the kitchen that could use a good sharpening, so after researching several machines, I choose this one and boy am I glad I did. Using the 1st stage for only the roughest blades, most were started out with the 2nd stage as directions call for and then progressing to the 3rd stage. I am delighted with the results. From high quality carbon steel, stainless steel, and run of the mill pocket knife steel, this machine sharpens them all with just a few swipes through the 2nd and/or 3rd stage. One knife was in really bad shape with pits and pieces of the blade edge missing, and a few runs through the 1st stage, then 2 and finally 3 made this knife look new and is back to being one of my favorites. A must buy and a superb tool for every kitchen."
