"This mandoline is one of the better designed kitchen products I have used. The contruction is sturdy and ergonomic with easy to assemble pieces and safe operation. I was very pleased with the ability to set the plane and achieve paper thin cuts on charcuterie and salumi. My only caution is that the spring loaded stabilizing plate inside the food receptacle is designed for a wide food product. When using narrower items, cucumbers, salami, etc. the food may shift if it isn't properly placed. With larger food items this is of no concern. The blades are sharp and extremely precise, the storage case is fantastic and provides an easy way to keep the madoline out of the way. I would recommend this product to anyone considering it. It is clearly a best in class product and worth the higher price."

"This mandoline was capable of cleanly slicing and dicing any vegetable I thew at it - from the softest tomatoes to the hardest squash. The setup was easy. It readily converts from right to left handedness. Cleanup was a breeze - basically just rinse under running water. The storage case was well made. I would definitely recommend this to anyone who is frustrated with lesser machines. Pricey, but worth it!"

V-Pro - Excellent choice!

"After extensive research on the features of various mandolines (sharpness, safety features, etc.), I purchased the De Buyer Mandoline V-Pro. I was delighted to see the very nice case it came in, however, was quite intimitated at first by the extremely sharp blades. I listened to the advice of a chef I know and also purchased a cut resistant glove. Safety is key. I took all precautions and viewed the video along with reading the instructions carefully before attempting to use it. I practiced using soft and hard vegetables and fruits and was very happy with the results. It does indeed do what it claims. The round food pusher worked well but I especially liked the De Buyer long pusher, which I purchased as well. I regret that I did not also order the 2 mm serrated blade because it would complete the set and be very useful. There is a vacant slot in the case to hold it. So far I have prepared an apple pie and cole slaw. Both received rave reviews from my family. Possibly a less expensive mandoline would have been fine, however, I only intend to buy one and this was the perfect choice. Once I get the mandoline set up, I feel comfortable using the round and long pusher safely. I will continue to be very careful not to cut myself. I definitely recommend this mandoline to someone who wants a quality product that does exactly what the manufacturer says."

"I am a chef and have used this mandoline many times as it is the only one we have. It is a complete waste of time to assemble and it is even worse at cutting. Rips everything apart and breaks easily. (we had two but the first broke) A cheaper mandoline would be better in every way."

"This is a wonderful mandoline, I use it almost everyday for small jobs and big. It cuts soft vegetables easily and has no problems, perfect slices every time. I do agree with a previous reviewer that it helps to moisten the blade first. Very sharp and intimidating looking until using it for the first time. I don't know how I survived without it for so long."

"My husband bought me the V-Pro for Christmas. At first I was intimidated by the size and price, but after using it a few times I really like it. I still haven't tried all the cuts, but it's easy to use and clean. Love the carrying case. Whenever I get it out my husband comes into the kitchen and has to use it. I can't keep him away from this machine! Do be sure to moisten the blade before you begin slicing otherwise you will get uneven cuts until whatever you're cutting moistens the blades."

Ah, but It Is Ambidextrous!

"Please note that, in apparent contradiction to an earlier review, this mandoline can indeed be used by left-handed people as easlily as right-handed. Just watch the video, where they demonstrate exactly how to switch it over. The V-shape to the blade is like when you are cutting something soft with a knife and you use a sawing motion instead of just chopping. This is the sort of tool that spoils you for anything else."

"One of the best kitchen tools I own. I am not a gourmet cook but I do enjoy high quality utensils. This is easy to put together, amazingly sharp, extremely efficient and a breeze to clean. I find that I use it not only for the bigger jobs (cole slaw, making pickled beets, etc. but also for every day use ex. sliced carrots for supper. It is very well constructed and if used properly very safe. I positively would recommend it to anyone."

"By far the best mandoline that I have ever used!!! I can't believe I waited so long to purchase this product. I have had this mandoline for about 2 weeks now and have sliced just about everything with it. It is very sturdy, well constructed, simple to assemble, easy to use, and easy to clean. The V-shaped blades also make quick work of slicing and dicing with minimal effort.
I would recommend this product to anyone that is serious cook. I think that even though it is an excellent product that the price makes it a little impractical for anyone who wouldn't use it on a regular basis.
I rated it at 4 stars only because it can only be leaned to the right for right-handed cooks. I am left-handed and would have preferred that it be able to be leaned to left but I am getting used to it. I just think a universal design would have been better..."

"The De Buyer is sturdy, handsome, and well-packaged for transport and storage in a huge molded plastic case. The V-blades snap in easily, and adjustability is simple. In assembling it, I felt that I had puchased a product that will last a lifetime. It does take some practice to get uniform slices--you don't want to push too hard, for example. A nice glide does the trick. I contemplated a mandoline purchase for a long time. I wanted to have the ability to slice vegetables paper thin for salads and figured that with just the right presentation I could encourage my toddlers to eat some veggies and dip. A favorite treat is sweet potato chips, "fried" in the oven with olive oil. I looked at several inexpensive mandolines in stores and found them rickety. I purchased the de Buyer V-Pro Mandoline figuring that if I purchased a lesser model, in the long run I'd be dissatisfied and would end up purchasing this one too. I selected the DeBuyer over brands like Bron which are sometimes accompanied by warnings in catalog to the effect that they are for professional use and can be complicated. I was pleased to find the product at Chefs with free shipping. By navigating to Chefs via ebates, I received $12 cash back on this product from ebates."

"What a difference a V shaped blade makes! Having owned other less expensive mandolines in the past, I can't believe I waited to buy the de Buyer V-Pro. It is stable and glides smoothly through the whole range of motion. The cuts are consistent in thickness, even through often difficult to cut vegetables or fruits with seeds. It is easy to clean and stores well in its case. I would buy this item again and again. You won't be sorry for spending a little more for this mandoline. I can't believe I waited so long!!!"

"I used this Mandoline for an apple pie recipe that took first place in a apple pie contest. The blades are very sharp and it's not flimsy like others on the market. I use this when I want to impress. It makes the most beautiful veggie platters. I use this especially for scalloped potatoes, because the even slicing makes for even baking. The cleanup is very easy as well."

Best Mandoline Ever Bought

"Have bought popular brand name mandolines!! They were difficult to use, cheaply made, and worst of all dull blades after used a few times!! Then I purchased the very professional de Buyer V-Pro. Now I can have my spagetti sauce on the stove in under 30 minutes. Whole peppers, onions, celery whiz through the blade and special attachment resulting in uniform pieces. Salad carrots, peppers, cucumbers and all else are done in a zip. Potatos can be sliced absolutely perfect. Slant of product gives you a grip that does not cause wrist or arm to be uncomfortable which enables you to cut up all nonstop. Blade is still sharp after many uses. Clean up fast. . Super deluxe case holds unit and attachments compactly. Great buy for a gift. Would buy again."

Fantastic Mandoline-Worth Every Penny

"I had tried several other, less expensive, mandolines and always ended up going back to my knives. Then I received the DeBuyer V-Pro as a gift and instantly fell in love with it. The blades are so sharp it doesn't matter whther I'm cutting a tomato or a hard daikon, both are sliced quickly and easily. I recently made a Thai Style salad consisting of matchstick size pieces of about 6 different raw vegetables; carrots, jicama, etc. I was cooking for a large group and had alot to cut, about 5 lbs. total. No problem at all. It literally took me longer to clean the veggies than it did to cut them into perfectly uniform matchsticks.
Like any specialized tool there is a bit of technique involved. Like if your cutting something hard, you need to find the best way to hold it so that it doesn't get away from you. It's pretty simple to figure out what works best though and if your willing to sacrifice a few potatoes you'll master it in no time.
So, if you're looking for a mandoline forget the cheap ones and go straight to this one. It may cost a bit more than other mandolines, but it's definitely worth it"

"This is an outstanding tool. Not a toy like I had purchased at the "big box" stores. Infinitely adjustable thickness and the "V" blade cuts soft items (ripe tomato and eggs) with no tearing or deformation. The big cup for food is larger than any one on the market and the pressure spring REALLY works. Also bought the long food pusher - NICE accessory for items like cukes and zuch's."
