If you bone a lot you need this....

I recently added this knife to my rather extensive collection. There are right and left handed models, so it gives a right balance and a nice handling fit. This knife is similar to the knife they use in slaughter houses. If you are planning to bone a leg of lamb or a pork shoulder etc. this knife has no equal. It can be used to disjoint a chicken or a turkey as well. Shun knives are always razor sharp so expect an effortless experience as you use this knife.

I am a working Chef, and this knife is all around a ten. Easy to handle, extremely sharp and stays that way. I will recommend this Shun boning/fillet knife to all my friends in the culinary business.

Was always hesitant on buying a boning knife, thinking it did not belong in my knife collection. But lately, I was hoping to find a knife to trim whole beef tenderloins without wasting a lot of beef. Look no further, this knife met all of my expectations, just wished I would have bought sooner.

Just after I recieved the Shun Gokujo my son came in with
several yellow fin tuna just caught in the canyon about 70 miles off our coast. The new purchase did an excellent job and short work of the catch. We are enjoying the tuna in all our preporations.
