"I own several good kitchen knives. Two Kyocera ceramics, sharp and fragile with whimpy feeling handles, (my tomato knives) A Wusthof Classic Ikon 10" Chefs knife which I absolutely love. The most beautiful design lines. Perfect handle, wonderful balance, keen navigator, stealthy feel of absolute control thru any medium. Great edge retention. And my most recent addition to my knives, this Shun Ken Onion. While described as beautiful, well, you decide. Handle grip and feel, surprisingly good. While I prefer to work with the Wusthof, the Shun layered steel is in a world of it's own. It is by far the hardest, most durable edge I've ever used. (professional and private chef 25 yrs) This knife just cuts and slices and chops like no other. The steel is hard enough to maintain a sharper bevel than the German knives. Once again, expensive and nothing else like it!"

"I have to agree with the other review that this is the best knife I've ever owned. The ergonomic design makes working with it much easier and the blade holds an edge for an extraordinarily long time compared with other knives. The price may seem steep but I can't imagine you'd ever need to buy another knife in your lifetime. My mom loved it so much when she came for Thanksgiving we were fighting over it so I ended up getting her one for Christmas."

"This is one of the best knives I have ever held or used. Blade is incredibly sharp right out of the box, due to the extreme bevel of the blade. Handle is easy to hold and doesn't wear out the wrist. The curve of the blade is great for chopping . Blade also holds edge extremely well."
