Great Bread Machine

"This is a great addition to my kitchen!
I've had the Zojirushi Home Bakery Supreme for about a month now, and I am very pleased with its operation.
Prior to purchase, I read several reviews, so I knew something about some of the problems that other users had experienced with this product.
So far, I have only used the standard recipe. Also, I switched to the 1.5 pound loaf, just to get smaller slices.
The major problem was that the finished loaf tended to be a bit lop-sided, because most of the time there was more dough at one end of the pan than at the other. I solved this problem by opening the bakery when 1 hour 45 minutes remained (approximately at the beginning of the last rise) to even out the dough. (One time I was late, and the only problem was that the loaf did not rise as much as it would have otherwise.) Because this re-arrangement of the dough is a 'punch-down' the dough needs as much time as possible to rise again before baking.
Then I started using this opportunity to remove the paddles. When I open the bakery, I pull the dough up, remove the paddle and any dough surrounding the shaft, and cover the shaft with a small square of plastic wrap (to keep the dough from sticking to the surface of the shaft, which is not non-stick). I do this for both paddles. The resulting loaf only has two small pencil-sized holes instead of the larger cavities created by the paddles.
It's really important to make sure that the paddles are seated properly. One time only (I now check very carefully EVERY time) I had not seated one of the paddles. I got lucky, because I open the bakery before the last rise. I found a fairly large quantity of un-mixed dougn in one end of the pan. I removed ALL the dough, put it into a mixing bowl, and manually mixed everything together, and then replaced in in the pan, spreading it evenly along the bottom. Everything came out fine.
Initially, I was worried about even touching the dough once the machine had started. Now, I'm quite confident with removing the paddles, and after the paddle mix-up (see above), I've found that the dough is quite forgiving.
One further tip: WEIGH the flour. I don't know why they don't give weights in the catalog, but if you use weight, you'll find that it is a LOT easier measure out the flour. I use 1 lb. 1.5 oz. for the 1.5 lb. loaf, and put the flour into a small paper bag on my scale. Then it goes into a mixing bowl for mixing with the other dry engredients. (Professional chefs always use weight when measuring flour.)
I have not had a bad loaf yet, just some at the beginning that were not quite perfect. It will be interesting to try some of the other variants, but I wanted to get comfortable with the main process first."

"I found this bread maker to be the absolute best one there is to date!! No other brand even comes close! It mixes, kneads, rises and bakes a perfect loaf of bread in just 3 hours or less!! Makes short work of the most demandin bread tasks. It also makes jam, bakes cakes and bakes meatloaf! Forget about the days when you had to go through the daily drudgery or mixing and kneading bread dough by hand! That was a time-consuming all-day project! you never touch the raw ingredients unless you want to finish the douh making by hand, such as for pizza crust and dinner or breakfast rolls! "This is my second bread machine and I wouldn't use any other kind. It is worth the extra $$s. As long as you use good ingredients you get great results. The only time that the bread comes out a little uneven is if you make a small loaf - that's because of the horizontal pan."

"This is my second bread machine, bought it on the reviews here. I can not bake and it took me a week to get all the instructions right, but my oh my, now that I have it down, this machine is all that and more. Couldn't recommend it any higher. Must use fresh flour, I mixed my wet ingredients together before I added them to the pan, ie eggs with milk. I have gotten perfect results. I love this machine!"
