Purchased this knife a few months ago, used it to fillet chic breasts, fluke and to create stuffed pork roll. This knife was well balanced easy to sharpen so remember to sharpen a new knife as soon as you receive it and touch it up as you use it and when your finished. Premium product.

Review 4 for Wusthof Classic Ikon 7" Fillet Knife
Good knife, but no mention of leather sheath

I like this knife, although it doesn't seem as sharp or well-balanced as the Global it's replacing. I was surprised that it came with a custom leather sheath with belt loops; there is no mention of a sheath in the ad copy. I'm not sure how many buyers would take a knife of this size into the (hunting/fishing) field with them, but I have no such use for it. I'm somewhat disappointed to know that a portion of the money I spent on the knife, has actually gone towards the cost of the well-crafted sheath. I would not have bought the knife if I had known that in advance. I would prefer an option to purchase this without the sheath (to save me some money on something I don't need), or at least to inform prospective purchasers of what they are paying for.
