When I wanted to learn to bake, I naturally turned to America's Test Kitchen. Their well-tested recipes always deliver, and with special emphasis on the why, as well as the how, I am always able to improve my understanding of the mechanics of what they recommend This book did not disappoint. Beautifully laid out, in a ring binder with tabs for easy navigation, this book includes, not just recipes, but equipment reviews, techniques, and tips to help guide you through a smoother and more functional kitchen.And the back and front covers include charts with measurement conversions, and a list of emergency substitutions for baking in a pinch. And with all the step-by-step photos, the recipes are practically foolproof. This book is well worth every penny.
