Rose Levy Beranbaum has outdone herself! Her Cake Bible was fantastic, The Pie and Pastry Bible is amazing.
With almost 700 pages, all pie topics are covered!
Chapters include Crusts, Fruit Pies, Chiffon Pies, Meringue Pies and Tarts, Custard Pies and Tarts, Ice Cream Pies and Ice Creams, Tarts and Tartlets, Savorty Tarts and Pies----and Quiche, Biscuits and Scones, Fillo, Strudel, Puff Pastry and Croissant, Danish Pastry, Brioche, Cream Puff Pastry, Fillings and Toppings, Sauces and Glazes, Techniques, Ingredients and Equipment. My fingers are tired from listing all that!
She has also included a list of equipment and ingredient sources. However, as this book is 12 years old, there are no websites listed. Thank goodness for Google!
There are countless tips that will solve any problem, other than how to keep the family from the pie before dinner.
