This vegetarian cookbook is great for me because I am a vegetarian, but it is great for everyone. Nonvegetarians will also love this book because the recipes are so delicious and flavorful, no one will miss the meat. I love that there is so much in this book and recipes range all from appetizers to desserts. There is a large number of main dishes that sound so great and the recipes are easy to follow. This is a great cookbook for anyone and the meals are great for everyone.

The Vegetable Bible

I have been cooking with Deborah Madison's book for two years now and have barely scratched the surface of her many recipes from appetizers to salads to sides to main dishes and more.
Best of all is the book's middle section, where each vegetable is described. From artichokes to zucchini, how do you know when it is ripe, how to cut it, which parts are edible, and what other vegetables pair well with it? This book tells you, along with when it is in season and the most basic, quick way of cooking it. Then the following recipes for each veggie play on ever more complex variations to provide lots of room for variety.
In the margins for each vegetable are lists of what herbs, spices and other condiments bring out the best of its natural flavor, sort of like those lists of wine pairings, but for food. This is wonderful for the more intermediate cook who wants to experiment with new combinations but doesn't know what flavors and dishes will go well together. Delicious!
