This sharpener come with both coarse and fine stones. When I tired it for my Santoku knife, the coarse stones detected a small nick that I was unaware the knife had. A couple of draws on that eliminated the nick and a couple of draws on the fine stones produced the razor like edge at about 15 degrees. Excellent item.

I have two Chef Choice Electric Sharpeners, regular and Asian. They are easy and work well. This is even easier. No thought or set up involved. It sharpens the knives really well. I like it a lot. Would definitely repurchase.

Western style knives typically sport both thicker blades and more abrupt edges, so pre-angled sharpening tools are usually inappropriate for the Asian types. Of course, one can easily survive on Western type knives alone or use open face sharpening systems, but for quick touch-up in the kitchen, I've found this tool to be superb on carbon, stainless & Damascus steels - definitely well worth the price of admission.

My knives were dreadfully dull, and I've looked everywhere for someone to sharpen them professionally, but no one seems to be conveniently available. So this little gadget really has helped; my knives are much sharper now. It's easy to use, the only problem for a noob like me is, how to I know if I'm using it RIGHT? The direction reference terms like "light honing," but they're not specific as to how many times you should run the knife through the honing device before sharpening, or about how many times you can expect to run it through the sharpener before it's done. I don't want to mess up my knives, so I find I'm a bit lost as to how far to go. It is very easy to use though, and I will probably get used to it over time.

I recently purchased this for my Santonku. I have the Chef's Choice 130 for my "regular" knives, but knew I needed the different angle for my Asian ones, the price is right, and it does a very nice job.
