I've only used this for omelettes so far, but it's working just great with no sticking, which I kind of expected with a new pan. I love it.

Amazing does not describe the performance of this pan. It was non stick after using it three times. My first omelet almost slid off the pan the surface was so smooth. This pan is an excellent choice for eggs, crepes and omelets although I have used to cook other items. This would be a good choice to introduce youself to non stick cooking without all those nasty chemicals used in non stick pans.

Years ago had one of these pans from France but lost it during my many moves. When I saw it in Chef's catalog was pleased to get it back.. Makes great crepes Suzettes and my wife was very impressed.
One complaint was the handle had a burr on it near the weld to pan, but I ground it off with an electric grinder.

i seasoned this pan as instructed and it made perfect crepes the first time i made them. my husband was very impressed with the taste, i was impressed with the ease of making them and the cleanup. there were some marks on the surface of the pan, but the marks did not affect the pan its self. i called customer service and they said they would replace it right away, but i decided to try using it to see if the marks affected it, and it did not.
would recommend this pan to all looking for a crepe pan.

I was expecting more of a curve on the edges, but this pan worked great the first time. The batter didn't stick and was easy to turn. My teenager made some wonderfull crepes after following the seasoning directions herself. There is no non-stick coating to deteriorate and peel off as our last pan did. And, definitely worth the reasonable price.

Nice Addition

I just received this pan and have only limited experience so far, but my impression is very good. I seasoned the pan with potato peels and all went well. My first crepes released well. Yes, it discolors as others have complained but it is STEEL and will stain and change color. That is part of its aging and development of its nonstick qualities. I really like the durable construction. My conventional nonstick pans are getting old and ready for replacement. I will soon add some additional de Buyer pans for more conventional frying pan uses. I like this pan a lot. The only negative is the handle gets warm.

This pan is very solid. It has good thickness for even heating and temp retention. Easy to clean with hot water and brush. I will be buying more of the de Buyer brand in the future!

I sure don't know what happened, but the instructions (one side) were followed to season the pan and it turned the surface of the pan mottled and uneven, like something bubbled that coated the pan. I'll try again.
The instructions are different on the paper that wraps the pan and on the attached by string notebook. One says to boil the pan and the other says to fry potato peels to season it. Those French! Funny people!

It's been way too long since we've made crepes, but now having purchased the De Buyer French Steel Crepe 9 inch pan we'll be enjoying crepes on a weekly basis. This pan is excellent. The size is perfect, it cooks evenly, cleaning it is a breeze, and the quality of the crepes is magnificent. And the price is great and just what we were looking for. I look forward to making delicious crepes for years to come.

I have always used various carbon steel pans, woks and grill, so seasoning the a pan is a natural step and that handles get hot. I recently got the bug to make crepes and decided to start traditional. After seasoning the pan a awhile with fried eggs, the crepes worked out fine. For those who don't use a kitchen towel as a universal 'tool', this will the pan to help you get in the habit.

If you lack enthusiasm for non-stick cookware with its fragile chemical coatings try this and other steel pans. Once you learn the simple process of maintaining the seasoning, you will appreciate the advantages. You can preheat the pan according to proper cooking procedures without ruining it. Seasoning can be renewed over and over, unlike silicone which is done for after it becomes scratched. The nice flat bottom and sloped sides are great for crepes and small omelets.

Somewhat dissapointed, it sticks everything i cook in it,
After doing what they surgessted to prep the pan, it still sticks. I have been cooking for over 30 years and still love my Calphalon set the best. this crepe pan is good for crepes however you must add oil or butter before using it -- and that is what i wanted to do.

We love omelets and THIS is the perfect pan for that! This is the seventh DeBuyer pan that I have purchased from Chefs Catalog and I report with pride that everyone is a winner, especially this one! These are the best "non-stick pans" you can invest in! DeBuyer pans are indestructible and my six children love them too because they are EASY TO CLEAN!!!!

A simple pan, dedicated to specific use, I thoroughly enjoy and appreciate the fast and even heat distribution quality of the blue-black steel pan construction, which makes for cooking perfect crepes, pancakes, omellets, eggs, in addition to the durable weight and stay-cool handle. The only negative I have is that there was not consistency in the pan's construction, and I found small pits of rust on the backside of some pans and rough pieces of metal on the handle, upon inspection at the time of purchase. Otherwise, if you receive a pan without imperfection, it's well worth the purchase. Make sure you follow the directions on seasoning and wipe well; it does have a black residue.

I was so excited to get my first crepe pan. Love crepes so i am looking forward on using this pan. I seasoned the pan as requested when i got it. This pan makes great crepes. Its so easy to do.
