Just like that I became a pasta maker. It took a minute to get the hang of the feel and pressure to use but then I was a ravioli making fool. I love this item. Now I keep thinking of more ways I can use it. You don't have to be as precise as they tell you in placing the filling, I didn't even dollop the cheese, I just spread it over one sheet, covered it and rolled out the ravioli. Perfect.

This rolling pin saves a great deal of time if used properly. The person who wrote the Norpro description has never made ravioli with this rolling pin. Roll out the bottom layer of dough...usually a circle of dough with a 30" diameter. Spread your filling on one half of the circle almost up to the outer edge. Fold the other half of the circle over the top of the half with the filling. So you now have a half circle of 30" diameter and 15" from the center of the diameter to the outer edge. Take this wonderful rolling pin and line up the first square at the straight edge of the diameter, and roll straight to the other end. As you roll and press down, the filling will be pushed out into each square opening. The approx. 1/4" wide wood spline seals the edges of each ravioli square as it squeezes the filling out into the raviolo.

My son told me I needed to buy this Ravioli Rolling Pin to make my own Ravioli the easy way. He was right. I was able to use a family pasta recipe, roll it out into 2 pieces, one just slightly larger than the other, lightly roll the roller over the smaller piece to show me the spacing; spoon my own filling into the center of the easily marked squares, place the larger piece on the top and roll over the top to seal the pieces together. They cut apart easily with a pastry wheel.
What my son missed was the roller let me make great fruit filled sugar cookies too!

I just finished reading, " The Lost Ravioli Recipes from Hoboken", and it created a desire in me to make home-made ravioli's.. I wanted the authentic Italian items, as shown and used in this book, so I searched the Internet,.. And found the exact item I wanted, on the 'Chefs' website. I received it this week, and am delighted with it. - ( Ravioli Rolling Pin, from Italy)
