Brown or Blue?

This item is Graniteware, made in the USA by Columbian Home (for more than 100 years). Their 14" round, blue Bakeware pizza pan is my choice. However, this item is from their new Better Browning line. Its dirty brown color is not as attractive as the deep blue, the metal is thinner and the profile is slightly different. I bake pizzas at 550 degrees (the max for my gas oven) for 7 minutes, turning the pan once. The Better Browning pan was quick to warp in the oven, though it baked the pizza to the same deep brown color I prefer as does my blue pan. Unfortunately, the new pan arrived with a quarter-size enameling defect on the back (down to bare metal) that should have been caught at the factory. Chefs was very responsive and is sending out a replacement. The Chefs' cost was best for this item.The enamel surface on the Better Browning pan cleans easily and produces an evenly baked underside. In general, I prefer the blue pan (still available).
