I love that this sharpener can be used with or without electricity. It's a true hybrid, and even sharpens (and very nicely!) serrated edge knives. Lots of great features for the price.

We have a set of Wushtof knives that were getting dull. I ordered and received the sharperner. It was very easy to use and sharpened my knives which include a serrated Bread knife. The knives are sharp as new. Very satisfied with it. In fact I'm oredering some for Christmas gifts for our Kids.

For many years, I've been sharpening our kitchen knives manually using sharpening stone. Since I've purchased the Diamoned Hone Hybrid Knife Sharpener, #270, I never get reminder to sharpen the knives and guess by who (wife). Now knives are sharps as ever, and safe to use.

Despite having Japanese water stones, I just don't have the patience or the time to keep my knives sharp that way and this is a good compromise (for me). Note that it can mark the side of your blades (happened to me, and it seems to other people). Doesn't bother me as my knives are relatively cheap working knives and not used for display. Though I haven't tried, looks like the marks can be easily removed with some polishing paper if that's what you're into.
I also used it to re-angle a VG-10 santoku style blade to 20 degrees as to have a more durable angle and am actually much happier with the knife now.

My knives had become very dull and have been that way for a while. Finally got smart and ordered the knife sharpener....hoping for help. And I definitely got it. My husband sharpened all our knives and they all cut beautifully now....was able to slice the beef roast into thin slices with clean edges. Even the 20 year old knife is now sharp and usable again. Thanks Chef's Choice.
