Mauviel M'steel Crepe Pan

Mauviel M'steel Crepe Pan : Fully induction-capable and PFOA- and PTFE-free, the Mauviel M'steel Crepe Pan quickly cooks airy, evenly browned crepes from savory asparagus-chicken and southwestern crepes to dessert crepes including chocolate hazelnut and lemon chiffon. The Mauviel carbon steel crepe pan is an all-round pan for creating breakfast blintzes and poached eggs to caramelized onions and savory sauteed vegetables. Crafted in France by world-renowned Mauviel, the cookware's commercial-grade carbon steel construction withstands ultra-high temperatures, allowing longer preheating and superb searing. After seasoning, the French crepe pan acquires natural nonstick properties and is durable against metal utensils. As heavy-duty as cast iron but lighter to handle, the carbon steel pan is perfect for evenly heating light, fruit-filled crepes topped with tangy berry reduction. A triple-riveted steel handle offers increased stability for swirling butter and ultra-thin batter in the pan. The Mauviel carbon steel crepe pan is suited for all cooktops, including professional gas ranges and campfires, and is oven- and broiler-safe. In 1830 Ernest Mauviel founded his Mauviel manufacturing company in Villedieu-les-Poeles, France's "city of copper." Mauviel is a 7th-generation family-owned business and its superior cookware is still manufactured in France and preferred by distinguished chefs, culinary professionals and home cooks throughout the world. Originally specializing in copper products, today Mauviel 1830 also produces carbon steel, stainless-steel and aluminum cookware with the company's same legendary design and performance. With Mauviel's more than 180 years of expert craftsmanship, you can trust the lasting quality of the M'steel carbon steel pan for your own kitchen. This is a traditional french steel crepe pan. It's not the lightest pan but is just fine for flipping a few crepes. I seasoned it with peanut oil twice and then put it to use. Crepes made with a little butter in the pan first were totally non stick and came out even and glorious. I have also used it for the occasional omlete where it did a fine job there. It's a no frills pan that works great after seasoning and looks so authentical hanging from my pot rack. Love it!

Since changing to an induction cook-top I have had difficulty in finding a really good crepe pan. The Marviel M'steel pan is just right - good quality and excellent performance. The pan works well on the induction range and produces great crepes - a big favourite in my family. The pan also produces excellent omelets.

THis steel pan needs seasoning similar to cast iron or steel woks. Cooks fast and hot so good for crepes and saute veggies, but not so good for eggs.

I bought this thinking it was an ordinary fry pan. Guess I was being hasty. It turns out to be such an excellent choice for frying up eggs as well as crepes, that I returned to the site & bought a 3-piece frying pan set of the same material.
This material becomes non-stick with use & wear.
