Being somewhat of a knife junkie, and having a fairly large collection of Wusthof knives, I enjoy being able to select the exact knife that is best-suited for the task at hand. The moment I picked up this 6-inch Extra-Wide Chef’s knife, however, I knew I'd found a new "go-to" knife, for many tasks for which I'd previously selected different knives.
Besides being of the same exceptional quality for which Wusthof is famous, this knife is probably the most comfortable, well-balanced kitchen knife I've ever held or used - it is truly like an extension of my hand. The extra depth at the heel makes chopping a joy, without the additional weight and tip-heaviness associated with longer-bladed chef's knives which possess this heel depth. I not only find myself selecting this knife in situations where I'd previously used longer, heavier chef's knives, I even select it for tasks where I'd previously reached for my 7-inch Santoku.
Long story short, I couldn't be happier with this knife. Kudos to Wusthof for coming up with it.
