This is my go to paella pan. Wanted that crispy crust on the bottom. There are recipes for paella that you bake. But you need the crusty rice on the bottom to be authentic. Try this...you won't be disappointed.

....would be one that could handle enough paella ingredients for a dinner party of 14, yet still have a crunchy bottom and slightly moist rice; the 18" Carbon Steel Paella Pan delivered! My guests were thrilled when I brought the paella to the table. One small workaround was needed in cooking with the 18" pan. Enough space on a cooktop or fire to accommodate the larger size pan is required. I remedied this by using two burners; which was a bit unwieldy but worth the effort in a gorgeous table presentation.

Very nice pan. Great for up to 8 people. I intend to use it in my ceramic cooker, a Kamado. The handles stick out a little too much so I attempted to bend them up slightly to decrease the width. Un fortunately I popped a rivet.
