Victorio Stainless Steel Multi Use Canner, 20 Quart : This Victorio multi-use canner with encapsulated base heats evenly and eliminates guesswork to simplify canning. With color-coded "zone" settings, the temperature gauge/thermometer on top of the lid measures temperature of steam, and indicates by zone when to begin steam canning according to elevation. Unique dual-use stainless-steel rack transforms the stockpot into a water bath canner. To use rack for water bath canning, adjust handles from locked position and hook onto sides of pot. Fold handles under rack rim for steam canning. Multi-use pot is a large stainless-steel stockpot to simmer soup, stew or chili, boil pasta or shellfish. I recently wore out my canning pot and when I saw this one I decided to try it . When I got the pot I read the pamphlet and began to start my canning process. Directions were easy to follow and I am very pleased with my new canner. It can be used for many different items a great soup pot, cooking corn on the cob. the temperature gage is great so you know when to start your cooking time.

use for steam canning

I have been steam canning in place of water bath canning for fruits, juices, salsa, pickles etc for several years. It is SO much easier and faster to use since you are only having to use 3 quarts of water instead of gallons to move around not to mention the energy savings by not having to bring all that water to a boil. (The processing times are the same.) I had been using an aluminum one but was noticing a smell of hot aluminum when keeping it hot for hours doing several batches and the idea of breathing vaporized aluminum was bothering me. Enter the Victorio stainless steel unit.
It is designed a little differently than the other unit I was using, likely because it is meant to be able to be used for both steam and water bath, so it is a little more awkward to load and unload than the aluminum one that has a shallow base to set the jars on and a large dome like lid you put over the top. The Victorio directs the escaping steam out of the top vents and uses a temperature sensitive dial to help with timing the batch, both of which are a plus compared to the steam venting out the sides and timing based on the amount of escaping steam on the aluminum model. The stainless steel is nice, very solid and sleek looking
IT WOULD BE BETTER IF:
-the dial were a little easier to see. You have to lean over the hot, steaming pot to be able to see where the indicator is.
-there was a rack included that was specific for the steam canner application. You just turn over the rack designed for water bath canning, and the underside has the steel rods going across it which makes the jars sit unevenly if you try to put in the full 8 pints it states is the capacity.
I love using a steam canner. Its amazing how much time it saves. Remember that the indicator just needs to be IN the appropriate zone, so once you get there if you turn the heat down just to maintain it there you will have less water loss during canning and less jumping around of the lid and spitting of water out the top of the pot.

Absolutely love this hot water bath canner, got one for my daughter-in-law too. Made 6 pints of bread and butter pickles in it just the other day . . . very easy to use and the temp gauge made my job much easier.
