"Pastry chefs have always recommended measuring by weight rather than measuring by volume, and this little platform scale allows very accurate measuring in either English (oz) or metric (g) units. It is easy to zero, and that way you can measure either wet or dry ingredients in your mixing bowl. Dieters will rejoice when using it to determine exact portions. The printout is digital and easy to read, and there is a low battery or overload function as well. Since it will measure very small amounts, you can use it to weigh envelopes to determine correct postage. I've also used it for all sorts of weighing tasks not related to cooking because the base is large enough. It is easy to store because it is so thin. I keep finding more uses for this scale like wrapping coins (count ten coins and weigh, then extrapolate the value.) and you will too."

"I've had my dutch oven for at least twenty years. I purchased it for family camping when the children were small because of its versatility -- you can bake in it if you place a rack inside and put the cornbread, muffins, or whatever on the rack, and charcoal below and on the lid. We've had cobblers, baked beans, and mac and cheese made buried in the embers of a campfire. We even used it to boil water for lobsters on a trip to Maine, and the seasoning was not destroyed. Alton Brown suggested using it to fry chicken, and it really worked for that too, and there were no grease splatters to clean up because of the high sides. Mine is so old it wasn't preseasoned, but that is not a difficult process. It is very heavy so you don't want to walk far with it. I imagine it will still be in prime condition when our grandchildren are grown up and maybe their children too."

"If you have a permanent pizza stone on the bottom of your oven like I do, this peel will really help with bread and pizza baking. The only way I have found to get European style crisp light crusts and softer insides is with a stone and steam. That said, it is very easy to burn yourself putting the risen bread/pizza/brotchen on top of the stone--unless you have a pizza peel which gives you a twelve inch safety zone. I do the final rise on parchment on top of the peel and then slide the bread into the oven on top of the preheated stone. Removal is just as easy. Just tug on the parchment and ease it back onto the peel. No burns. I've had mine for a long time (probably 10 years), and the only problem I've had is finding a place to store it because it's big. It has gotten singed and stained a little over the years, but I'm not planning on serving guests on it. It works."

It Works - but with a cost January 12, 2008

"I have such angst when I use this product. Tonight I made lamb "lollypops" for an intimate dinner, and I used the grill pan, now about 8 years old. The good -- the pan gets hot quickly, the grill marks were beautiful, the square shape made it easy to cook hubby's medium and mine rare by adding them a few minutes later, the chops absolutely did not stick, by adding a a little wine I could deglaze the pan and rescue the meat juices and fond for a quickie sauce. The bad - I had forgotten how horrible this pan is to clean up. Nonstick does apparently not apply to what is left stuck to the pan (and remember, I did deglaze it for the sauce). I just finished scrubbing each individual ridge with a brillo
pad, and now I hate the pan. I'm looking at that 4 rating and considering downgrading it to a three. What it does well, it does very well. Nonstick? Not really...At least the dark gray color camouflages the black stuff I cannot get off."

"Anyone who has ever handcranked ice cream is going to love this ice cream maker. NO WORK! NO MESS TO CLEAN UP! NO ICE! NO SALT! Just prepare your ice cream mix and chill it (a few hours in the refrigerator really helps), assemble the ice cream maker, push the button, and pour in the mix. You'll stand in amazement at what is created because you do no work at all. You do have to pre-freeze the bowl (mine has taken up permanent residence in the freezer) and sometimes the ice cream has to harden a while in the freezer, but you will love the result."

"Cuisinart set the industry standard thirty years ago, and it's just as good now as it was then. It will chop, slice, knead, grate, whip, blend ---whatever you want. It is heavy-duty and powerful, easy to clean, and versatile. The Lexan bowl is truly unbreakable; I've dropped the top many times with no ill effects. While it is possible to change the feed tube size, it isn't easy to use the larger tube. It's hard to get the parts lined up correctly with large pieces of food inside the tube, but once you do, it takes seconds to prepare a workbowl full of cabbage or whatever. No kitchen should be without this marvelous tool."

"I've had this pot for several years now and have not experienced any problems with it, other than the ones my hard water, low cabinets, and lack of pouring skills have caused. I do think that the water level indicator, which is located inside the reservoir rather than on the outside, is very difficult to read, and the positioning of the reservoir on the back is an invitation to a messy spill. The appliance is very large; it is over fourteen inches tall, and it is impossible to open the lid to access the water reservoir while it is stored under my upper cabinets. It does have nice features like the gold coffee filter, the carafe temperature settings, the auto start and stop mechanisms, and brew pause, as well as the ability to make a smaller pot of coffee, and the price is attractive as well. If you want a LARGE coffeemaker, this is a good candidate, but keep a towel under it to catch the spills."

"When the E coli scares started, I decided to grind my own meat to avoid contamination. I purchased this attachment for my KitchenAid, bought some chuck roast, and started my grinding adventures. Assembling all the parts takes practice, and cleaning requires a bottle brush and patience, but you'll love the resulting burgers, meatloaf, and sausages. Don't stop at meat though; you can grind about anything else from bread crumbs to dried fruit for fruitcake. When you make sausage, you can grind the spices in with the meat, but I do prefer to give the spices a ride in the coffee grinder first to make them smaller. If you prefer lower fat ground meats, you'll appreciate this device because you can reduce the amount of fat in the grind significantly and save some money at the same time."

The Rolls Royce of Mixers December 4, 2007

"This is my third KitchenAid Stand Mixer. The first one only lasted fifteen years, the second one was purchased by my mother in 1942 and I inherited it in 1993 and used it for a couple years until I replaced it with my present Pro 600; my sister now has the 1942 model, and it still works! Add the three together, and you get 90 years of good service. This workhorse can knead the most difficult dough in an apparent effortless style; it breezes through brioche and buttercream which must be beaten for long periods of time without overheating or "complaining," and can whip up a double batch of cookies in record time. You do have to scrape down the sides once. The lever to lift and lower the bowl is a great convenience, and rarely does anything splash out of the bowl, regardless of the speed ( you have ten to chose from). The huge metal bowl is unbreakable and has a handle for ease in lifting. This mixer is a lifetime investment and is worth the price."

A "wonder" for bread and other things November 30, 2007

"I have used this bread knife for about ten years now, and it is still perfect for slicing homemade bread without tearing or squashing the loaf. However, it has other tricks in its repertoire: slicing a layer of a cake sideways to make multiple layers (it's long enough to get to the middle of the layer and doesn't destroy the crumb), slicing tomatoes from the garden thinly, slicing slightly frozen pieces of chicken, beef or veal into thin paillards, or slicing angel food cake without tearing it are easily accomplished. Buy this knife! It's worth the price."

"When I purchased the 1.5 qt pan, I wondered if I was making a mistake buying such a small pan. I needn't have worried; this is my "go to" pan for just about any fresh vegetable, and it is the perfect size for hard-boiling six eggs. The lid fits tightly, and I love how quickly the All-Clad arrangement of layers allows the pan to heat up. I've also used it as a double boiler atop a slightly larger pan - no curdled eggs in custards or sauces. Clean up is simple; just a swish of a sponge usually suffices, and the occasional burned on spots are easily removed with a plastic type scrubber with no bad results. All- Clad pans are the best and worth the price."

Versatile and a great size November 16, 2007

"I love a pot that will multi-task, and my dutch oven is used on the stove top more than it is in the oven. It is a perfect stock pot when you need to make six cups of stock instead of a gallon, it allows you to brown meats and vegetables for soups, stews, or chili and add the remainder of the ingredients with plenty of room to simmer, and of course with the lid, your lamb shanks, carne adovada or chicken turns out perfectly in the oven. I even use this as a pasta pot for two to four; it holds several quarts of water for al dente pasta, and the sturdy handles on the sides make it easy to drain. "This braiser is one of my favorite pans, and it can be used for a number of things besides braising. It is perfect for making mussels because of the type of domed lid, and it also moves easily into the oven for other foods, braised or not . The lid also fits other All Clad and Caphalon pans. All Clad pans are so easy to clean; usually just soapy water and a sponge is enough, but I've also scrubbed burned on food with various types of scrubbing pads with no ill effects. You'll love these pans!!"
