"This product has well earned its top rating in "Consumer Reports". It is an absolute pleasure having a drawer full of well honed knives. If one takes the time to follow the instructions, this sharpener actually extends the useable life of your knives. Food preparation is much easier with properly prepared tools. I would recomend this sharpener over taking your knives to a professional. Professionals charge by the piece. With this tool in your home, you can put a great edge on those knoves that you would never bother taking to a pro."

"My husband had been wanting an electric knife sharpener to sharpen his very nice Hinkle Knives. He researched for days and finally decided on the Chefs Choice Pro M120 . This was the only birthday request he made. Since his birthday in February of this year, we have very sharp knives and he has invited everyone he knows to bring their dull knives so that he can use his new sharpener. He is a very happy camper with alot of sharp knives. A good product."

Sharper The Better

"Sharp knives are essential in a busy kitchen. Want to slice and dice like Rachael Rae? You will need a sharp knife or you could spend twice the amount of time and energy pushing down on your dull knife to cut food. Let the knife do the work for you. I sharpen my knives with the M20 and depending on how much food I'm cutting I sometimes use the steel bar to maintain the knive's sharp edge throughout a long cooking period. I keep the M20 handy so I can pull it out of the cabinet and plug it in. It's so easy to have sharp knives all the time! Just follow the simple but must-read instructions. Keep in mind that only a sharpener, sharpens knives. The steel bar doesn't sharpen knives. After cooking for awhile in the kitchen and your energy is "spent" from cutting with a dull knife, this is when you're prone to accidents. A sharp knife cuts through the food a lot easier and faster, and leaves you with energy to spare."

"When I found out that the store that sharpens my knives closed, I was thankful I remembered that Cooks Illustrated had recommended this model as a best buy and I can see why. While I am not a professional, I appreciate a sharp knife and this does the job. I was able to easily use it straight out of the box and was very happy with the results. The directions are easy to follow, the edge of the blade is very sharp; trying it out on an apple yielded that lovely "shush" sound you get when slicking cleaning through a hard object. This morning I sent out an email to my girlfriends offering my sharpener up for their holiday preparations and I hope they take me up on it."

"This sharpener works well with all your good knives. I've used on both regular knives and santoku knives, both with great success. And it's so easy to use -- no problems unless you don't follow directions. The only concern is with cutting yourself as they become as sharp as new."

Not for Pros. Won't yield a Pro Sharpened Blade.

"I owned one of these and returned it. It is a good tool for the average home cook. However, I could not rate it higher because of its "Pro" designation. This is not a tool for Professionals, nor does it yield the results you will get if you take your knives to be professionally sharpened (which you can do several times for the price of this tool). The three primary weaknesses as I see it are: (1) it is designed to put the same angle on each balde, (2) the edges do not stay sharp and require frequent revisits to "stage 3", and (3) the device takes too much metal off the blade (way more than is necessry to achieve a sharp edge and certainly much more than is taken by a professional sharpening). This last one really bugs me as I expect my very expensive knives to last a lifetime given the relatively gentle use they get (I don't run a restaurant after all).
That being said, if these drawbacks don't bother you this tool will save you a lot of time and energy while providing you with reasonably sharp knives for years to come."

A purchase you won't regret

"After much research and angst we finally purchased this sharpener. What a happy day when it arrived!! Competition immediately began over whose turn it was to sharpen knives and who got to cut the onions (carrots, etc) - previously the chore that sent everyone running. Suffice to say that in kitchen with very little counter space, this holds a place of it;s own. We use it daily and although we've had it for over a month, are still thrilled by it with every use. Sounds silly I know, but when family members start bringing their knives to your house so they can sharpen them you know you've got something special. Works well on every kind of knife (and yes, we've tried them all!) As I said, buy it, try it you won't be sorry."
