All-Clad Cop-R-Chef Covered Sauce Pans : With
deep, straight sides and a perfectly flat bottom, this
pan is cookware's multipurpose workhorse for
everything from boiling eggs and heating soup to cooking
cereals and vegetables or -- the namesake function --
making sauces. The small 1.5-quart size is great for one
or two servings, or to clarify butter. The 2-quart size
is great for making oatmeal or a small recipe of pastry
cream. The 3-quart size makes five to seven servings.
The generous 4-quart size is for eight to ten servings
of hot cereals, vegetables, or pasta, or for making a
perfect Hollandaise. All-Clad Cop-R-Chef combines the
warm glow of copper with the durability of a stainless
steel interior, so you never have to worry about
retinning. The extra-thick copper exterior, a core of
pure aluminum (across the bottom and all the way up the
sides) and the cooking surface of 18/10 stainless are
permanently bonded, so you get the beauty and
responsiveness of copper, the superior heat conductivity
of aluminum, and the nonreactive, stick-resistant
benefits of stainless steel. Handles are cast stainless
steel with noncorrosive stainless steel rivets for
optimum durability. Oven safe to 500 F. Hand-wash using
copper cleaner. Made in the USA.
