All-Clad MC2 Saute Pan : Designed for cooking meat or vegetables in a small amount of oil or butter while continuously tossing, stirring, or shaking. The lid lets you finish a dish under cover without changing pans, and the stay-cool stick handle and helper handle make it easy to lift. The 6-quart pan holds up to three ribeye steaks (six servings) for searing; slide pan into the oven to finish cooking, then return to the stove to make a quick au jus or duxelle sauce from drippings, wine (to deglaze), butter, and herbs. The 4-quart pan has the classic design with flat bottom and straight sides, for sauteing, pan- frying, or with the lid for braising. The 3-quart pan is a wonderful multi-use pan for family cooking - searing small cuts of meat, sauteing vegetables, or making a superb veal scaloppine. The 2-quart pan is a terrific small pan for one or two servings, or for browning a handful of mushrooms or a chopped onion. MC2 blends the best of the legendary Master Chef original cookware with a redesigned contemporary look for a roomy sauce pan that warms, simmers and boils to superb perfection. The brushed aluminum exterior with pure aluminum core ensures quick and even heating. The 18/10 stainless-steel interior will not react with your food, leaving the pure taste you desire. Love this saute

I've found this to be a great saute. I have some issues with my hands and feel this lighter and easier to handle than the coppoer core. Though the handles are a bit big for my hand they are long enough that the end of the handle rests against my forarm for stability. The brushed exterior is easy to care for. I've found it to heat eavenly. While a bit pricey this pan gives me the best of both worlds...ease of use and even heating with the quality you expect from All-Clad.

This pan lived up to its press. I was able to gently saute garlic without burning, evenly cook a full pan and easily clean up stuck fond. It went in the oven to warm, had heft without the weight of cast iron, and was everything I was looking for.

We are in the catering business and have tried many pans. These are among the very best out there. They are well weighted, they cook evenly and they clean up easily.
These are the pams my husband reaches for whenever he has to saute on make a sauce!

we replaced our old non-stick with the MC2 line and love it. this is the piece I use most often. only caution is that they are more sensitive to heat than most cookware so you need to cook at a bit lower temperature. by far the best cookware I've used...will never go back to non-stick!

Best Cookware

I have had this saute pan for years and have 6 other pieces of All-Clad MC II. I started my collection over 10 years ago, and all of it is in perfect condition. I don't plan on ever buying any more cookware. I'm sure it will out live me. The secret to long lived cookware is to never put detergent or soap in it. You have to start out with new cookware though; if you never let soap touch its surface and only clean with warm water and a little scrubbing food will never stick.

All-Clad and finish

Although this review covers the saute pan, mine is a 6-quart, what I really want to cover is the finish. I have both some MC2 and some all stainless. I like the MC2 better. It is not as shiny of course, but heat-up is faster and more uniform. The inside cleans up the same. The MC2 is slightly more affordable. Next, the handle design. There are several other brands of cookware available that are excellent, but All-Clad handles work for both small hands and large. They are long and offer excellent leverage for picking up a full pan. Larger pans often are fitted with a loop handle to facilitate control. The lids fit snugly. My large saute pan probably gets more use than any other pan. They are excellent for so many things from sauteing onions or other veggies, to browning even a large roast before roasting. When a big gang needs feeding this pan can handle a lot of grub. It also offers a nice alternative to a wok for stir-frying. All-Clad is not cheap, but these are really lifetime pans. We now have given sets to our children and have equipped both our house and vacation home with them. There are no better pans at any price.
