Wusthof Classic Wide-Blade Chef's Knife : Designed for chopping or slicing on a cutting board, the chef's knife has a rigid blade to absorb impact with a slight curve that enhances balance and prevents food from clinging. The heft of a chef's knife is intended to let gravity do most of the work. Have at least two of different lengths to handle the full range of food sizes. And because a firm, comfortable grip is essential, choose sizes that conform to your hand. Both the 8" and 10" knife gives you extra help: its wider blade is great for chopping large quantities of onions, celery, or peppers and for transferring the pieces to cooking pot or salad bowl. About Wusthof Classic: Precision-forged blades of Wusthof's own high-carbon, stain-resistant steel alloy, for a lasting edge that is easy to resharpen. Distinctive bolster prevents your hand from slipping onto the blade. Handle is a virtually indestructible composite, buffed by hand for a smooth finish and triple-riveted to the full tang for optimum strength and balance. Dishwasher safe, but hand-washing is recommended. Made in Solingen, Germany.

"I am a Pro chef and this is my third most used knife at work and at home. It is easy to clean and has a well balanced shape for less fatigue on the hand and wrist. This knife is a close second to my Classic Santoku and my Gourmet Serrated Slicer as my favorite. It's only draw back is its weight. I have big hands and I'm about 6 foot so it doesn't bother me much, but in smaller hands it can be a little too much. The only thing I would change is that it has a solid edge, it would be my favorite if it had a hollow ground edge which would make slicing things like potatoes much easier. All in all, it is a sturdy knife and can handle just about anything the santoku and serrated can handle but it is a little slower than those two knives. This knife will please you with every cut."

"One of my favorite things about this knife is how well balanced it is. It is a heavy knife, but it is so easy to use that it feels better than a much lighter knife. This is especially noticeable after a few hours of chopping: I am less fatigued than I am with the cheap prep knives I find in most kitchens. (I strongly recommend finding the RIGHT knife for your hands if you are going to be using any knife for an extended period.)"
