After a light greasing with oil, no further fat or oil is added, so one can also enjoy the benefits of low-fat cooking. Any fat that escapes from the food is held between the ribs of the base. The deep-sided design prevents splattering onto the stovetop and the handy pouring lip directs cooking juices and excess fat away, if necessary. The pan can be "deglazed" after cooking with water, stock or wine so the flavors and juices of cooking can be served "au jus" with the dish. To check that the grill is hot, scatter a few drops of cold water over the surface. If they evaporate almost immediately, the surface is hot enough. Brush the ribs lightly with oil. The surface should not be smoking before the food is added. If it is, remove the pan from the heat and cool slightly before proceeding. All meats, poultry, fish and vegetables should be dry" before cooking begins, otherwise they may stick to the ribs. Pat dry on kitchen towels. Marinated foods should also have the excess moisture patted dry. Once placed on the ribbed surface, foods should not be moved immediately, otherwise the distinctive "char" lines will not be produced. Leave for 1-2 minutes to seal and sear the outside before turning over.

Great Grill Pan

After reviewing several grill pans, this is the one. It was purchased to fit my single burner induction range for efficient grilling. This combination does not heat up the kitchen. Satin enamel surface works well with meats and vegetables. The cobalt enamel finish is beautiful. (I have several colorful Le Creuset pieces.) I found an inexpensive grill press to complete the set. CHEF's has hard-to-find Le Creuset at reasonable prices!
Although the grill is somewhat small, its great for a light to medium meal.

I make the best flat bacon with this grill. the shortness of the grill made it easier to drain the grease when making something like bacon.

Excellent product for the money

We own and operate a fishing lodge in northern Wisconsin, serving hot lunches to our clients. I primarily use the grill pan along with the grill press (sold seperately) for making paninis. The grill pan is excellent for this, as I can make two large sandwiches at a time, takes minimal time to reheat for the next batch and doesn't take up any countertop space. I have also used it for grilling hamburgers and bratwurst inside. Clean up is easy, the finish is durable, and best of all there are no parts to break, so I expect to have this pan for a lifetime.

Versatile! Le Creuset wins again!

This was my first Le Creuset purchase and I've been sold on the brand ever since. This pan is perfect for searing up juicy steaks, but I also use it for scallops and fish with ease. The cast iron gets well seasoned and the combination of an enamel back makes for easy clean up with steel wool. I use this pan weekly.

Too small for me but...

This was too small for my needs- thought it was the double burner size, so I returned it. But that being said- for a single person- this would be perfect! And easy to store.
