"I've used a famous German brand of knives for years... but now they sit in the block collecting dust. The blade on the Shun is very sharp and holds an edge for a long time. The balance is near perfect... and it looks gorgegous! Who could ask for more?"

"I tried this knife when it was first offered. It is without a doubt the finest knife I've used. Over the past couple of years I've replaced all of my knives with Shun products. I cook for a lot of banquets and special events. At first I was concerned with the thin blade's ability to hold an edge, but no longer. I used this knife to trim and "french" 300 pounds of pork ribs and when I was done, the edge was still great. I found the Chef's Choice Asian sharpener to be the best tool for honing and reconditioning the edge. I wouldn't be afraid to use this blade in any demanding commercial application."
